Calories In Food Seem Low - What Am I Not Tracking?

Hey,

I am starting to track my calories and things just seem off. Like, I normally eat two meals a day. 3 eggs, a bit of cheese, and 2-3 slices of bacon in the morning - which comes out to 500-600 calories. Then something a protein like chicken and vegetables for dinner, which again comes out to 500-600 calories. I feel like I'm eating more than 1000-1200 calories a day. What am I not tracking/missing? Is it oil/butter - that adds another 200-300ish but some days still feels low in terms of the number I'm looking at.

I don't snack and I'm currently taking a break from drinking.
